To start off, let's gather the ingredients for the salmon patties. You will need:

  • Skinless boneless salmon
  • Onion
  • Bell pepper
  • Bread crumbs
  • Eggs
  • Seasonings of your choice (salt, pepper, or Chef Bay seasoning)

Preparing the Salmon Mixture

Begin by cutting up the onion and bell pepper. Set them aside. Open the canned salmon and remove any bones, spine, or skin. This may be a bit more expensive, but it saves time and effort. Use about four cans of salmon and add the onion and bell pepper to the mixture. Don't forget to season it with salt, pepper, or your preferred seasoning.

Making the Grits

For this recipe, we will be using stone-ground grits. If you can't find them or prefer instant grits, feel free to use those instead. Soak the grits in water for a few minutes. Remove the grits that sink to the bottom and discard the ones that float. Cook the remaining grits in a pan for about 10-15 minutes until they become thick.

Add the salmon patties and sprinkle some cheese on top of the eggs and grits. Stack the cooked shrimp and garnish with fresh parsley. If fresh parsley is unavailable, feel free to use the parsley from your cabinet.
